As for using it in Owner Mode, I believe there is a stadium selection screen before you enter the game. You would click your way to AAA Stadium Two instead of using your Create-A-Stadium. Just choose the second AAA stadium from the selection screen and at the end of the game you will have either gained or lost money based upon your created stadium.
