As evil suggested, need to look into upgrading the RAM. As for MVP 07, you have must remember that it is a little more graphic demanding than your basic MVP 05. The modders have added greater detail to the uniforms, stadiums, etc... I would start out on the lowest graphical settings as possible and go from there.
