Although deliveries and stances can't be modified, there are a lot of options currently in the game to choose from and you can change it for a particular pitcher such as Dice-K and any pitches he may throw (ie: magical gyro ball perhaps) that's not in the game can be made so that it seems to be in the game. For example, in the current Roster set I have, Dice K is given Kazuhisa Ishii delivery along with several pictches that have a lot of movement and extreme trajectories ... one of which may actually be close enough to the gyro ball ... if at all. *note* if you haven't already, you can download MVPedit @ http://www.glass4.com/ and you can check out all these stats in each roster.
