For example, when MVP 2005 first came out, there was an issue with the graphics stuttering when throwing the ball across the infield. EA made a "patch", and fixed this issue. It comes in the form of a download which you have to install to your game. If you're asking specifically what all of the MVP patches do, I don't remember what each one was for.
