One thing I have found out, at least on my system.

If you have your antialiasing and Anisotropic filtering turned on in your graphic card control panel, try turning those off and choose to let the application control it.

I had those turned on and had the same problem using a 8800GT card.

Once I turned those off everything was cool.

This is what fixed mine.I have a GTX460.

I turned off MSAA ingame.

I created an MLB2K11 profile in the Nvidia Control Panel

Anti-aliasing mode = Override

Anti-aliasing Setting = 8xQ

Maximum Pre-rendered frames = 1

power management mode = prefer maximum performance

texture filtering - negative LOD bias = clamp

with these settings I no longer have stutter or black screen dropping to the pause menu.
