When starting a franchise game, on the screen that shows the team ratings and uniforms and such, you can press 4 (in logitech terms) and go to a screen and select whether the umpires wear black or blue uniforms, among other options. Off topic, because I didn't want to create a new topic, but in MLB Today Season Mode (and Franchise and Play Now) how do you change the uniforms? I only played around for 20 minutes last night but I couldn't find the button or stick rotation to allow me to change the uniforms for the game.
